Vải bóc vỏ, dùng dao nhọn tách lấy cùi vải, bỏ hạt, cho ra đĩa.

Ớt chuông rửa sạch, cắt miếng nhỏ hình vuông, bỏ hạt. Mướp hương gọt vỏ, rửa sạch, cắt xéo.

Làm nóng 2 muỗng canh dầu ăn trong nồi, cho ớt chuông vào, xào khoảng 2 phút. Sau đó, cho mướp hương vào cùng.

Khi thấy mướp hương vừa chín tới, cho vải vào. Nêm gia vị 1 muỗng cà phê hạt nêm chay, 1 muỗng cà phê muối, 1/2 muỗng cà phê tiêu, đảo đều khoảng 3 phút.
